I don’t think it’s called mirepoix in Italian, but onion, carrots, and celery is a pretty standard “aromatic” base for any number of soups, stews, and sauces. The recipe said I could grate the carrots, so I did, but I used the wrong grater (should have been the coarse holes) — not that I think it made a difference.
